OK so I came here specifically because I am baffled at their size. Japan does not have the exact same deer that the Americas have; they have sika deer - many variants of them. The ones in China are quite large - the ones in Japan aren't, with the smallest females being half a meter tall (19" at the shoulder) as adults.
Then again - sika deer KEEP their spots. I haven't found a single spotted deer in Elden Ring, nor any real variation between the hind and the stag. The ones with massive antlers are just as small as their female counterparts, which isn't how it works.
Why on Earth did they model them so small?!? I took like eight minutes to pause and research this and another 2-3 writing this. I am coming back here when I find a definitive answer.
