Works against most animals (Runebears, T-Rex Dogs, Big Birds, Giants, Crabs, Tentacle Monsters, Lobsters) and some bosses, most notably Godskin Duo can be cheesed with sleep arrows.
Humanoid Enemies are immune to sleep and only suffer from a small tumble (can still be backstabbed during the animation).
There are some exceptions. The big caster dudes in Haligtree can be put to sleep.
Bit of trial and error to figure out which enemies are weak to sleep.

I swear these just don't work, I was gonna play a sneaky assassin build and just take out mobs one by one, but unlike in the trailer, you need to shoot a regular soldier at least 4 times for him to sleep, which not only isn't were sneaky, but also makes them just snap out of it right away and after acting little drowsy for a bit just they come after you like nothing happened
