Their model seems to be based on the northern hawk owl. Also, they probably don't fly away when you get close since owls irl tend to stay still to try to remain hidden, even when approached.

There is one close to the Saintsbridge site of grace in Limgrave - go west and it’s on the same building where you find the Lance.

Go to outer wall battleground and go outside the walls to the right theres an owl almost up against the outer wall

When the owl didn't flee I thought maybe there was something special to be done with them.
Turns out they're just for farming eggs. :(

Weeping Peninsula, fast-ride for 11 seconds exactly northwest from South of the Lookout Tower site of grace. Next to the big ruins fragment stone thing, on a rock ledge but not a high ledge. You'll hear a hoot hoot! Repeatable by returning to the site of grace after each kill, easy Slumbering Eggs.

I was hoping I could drop items and the owl would eat it and befriend me but seems like you gotta kill em to get items :(
This is one of those cases where I have to question how the player character loots the wildlife, did the owl lay an egg in its death throws, or did the player character do a split-second autopsy and remove the egg from the owl's body. It gets even more confusing and foreboding when you consider that you are able to loot excrement from a rune bear's corpse, i don't want to think about it too hard. Not to mention weapons re-sizing so that you can wield them after enemies drop them, like with the troll knight and the golems, there's no possible explanation for that.
